Mediterranean Falafel Salad with Tahini-Lemon Dressing

Ingredients
6 Thryve Frozen Falafel (heated in 36 seconds, halved) 4 cups mixed salad greens (romaine, butter lettuce, or mesclun) 1 cup cherry tomatoes, halved ½ cucumber, sliced into ribbons or half-moons ½ cup roasted red peppers, sliced ¼ cup kalamata olives, pitted and halved ¼ cup crumbled goat cheese or feta 2 tbsp toasted pine nuts or pistachios Fresh herbs: mint & parsley for garnish
Tahini-Lemon Dressing: 3 tbsp tahini 2 tbsp fresh lemon juice 1 tbsp olive oil 1 tsp maple syrup or honey 1–2 tbsp warm water (to thin) Pinch of salt + black pepper
Directions
1. Heat the falafel: Warm Thryve Frozen Falafel in the microwave for just 36 seconds, then cut in half. 2. Prepare the dressing: Whisk together tahini, lemon juice, olive oil, and honey. Add water until pourable. Season. 3. Build the salad: Layer greens, tomatoes, cucumber, roasted peppers, and olives. 4. Top it off: Add falafel, drizzle with tahini dressing, sprinkle with cheese, nuts, and fresh herbs. 5. Serve: Light, fresh, and ready in minutes.
