Ingredients
8 Thryve Frozen Falafel (heated in 36 seconds)
8 brioche slider buns (or mini pita pockets for a Mediterranean twist)
1 cup mixed greens (arugula, baby spinach, or watercress)
½ cup thinly sliced cucumber
½ cup quick-pickled red onion & carrots (see below)
½ cup crumbled feta cheese
Harissa Aioli:
½ cup good-quality mayonnaise
1 tbsp harissa paste (adjust heat to taste)
1 tsp lemon juice
1 garlic clove, finely grated
Quick Pickle:
½ red onion, thinly sliced
½ cup shredded carrots
½ cup apple cider vinegar
½ cup water
2 tsp sugar
1 tsp salt
Directions
1. Heat the falafel: Warm Thryve Frozen Falafel in the microwave for just 36 seconds.
2. Make the pickles: Combine vinegar, water, sugar, and salt in a small saucepan. Pour over onion and carrots. Let sit at least 20 minutes.
3. Mix the aioli: Stir together mayo, harissa, lemon juice, and garlic.
4. Assemble the sliders: Toast buns lightly. Spread harissa aioli on both sides. Add falafel, greens, cucumber, pickled veggies, and feta.
5. Serve: Secure with skewers and enjoy immediately.
